"Exhuming and Other Fine Hobbies"
The "Exhuming and Other Fine Hobbies" Red Dead Redemption mission is your first introduction to the creepy grave-robber Seth. He's clearly insane and in need of some help. Unfortunately, he's also your best chance for getting inside Fort Mercer.
Seth is angry because his former partner stole half his treasure map. He's a little worse for wear, having not bathed in several months. In order to secure his help, you're going to have to assist Seth in recovering the rest of his map. Moses is being held by some lawmen out at Benedict Point, and you'll have to ride out there together to get started.

Ride to Benedict Point
Seth isn't the most pleasant of traveling companions, and you've got a long way to go before you reach Benedict Point, so prepare yourself for a frank discussion of Seth's grave-robbing habits. Eventually the conversation turns to the gang at Fort Mercer, and Seth actually seems to think he can help you get in, as long as you help him with his little problem first.
Once you reach Benedict Point, you and Seth will stop and formulate a plan. Your job is to distract the deputies so Seth can move in and talk to Moses. To do so, you'll need to hijack one of the deputies' horses.
Hop on either of the horses hitched in front of you and take off, the deputies will surely follow. Ride fast and get out of sight as quickly as possible, as the lawmen will have no qualms about shooting you as they give chase. Keep your distance until you lose your wanted level, then head back toward Seth once the heat is off.

Return to the Scene of the Crime
The deputies are still out looking for you, so there's nothing to stop Seth from having a word with Moses. Moses is no fan of his former partner, though, and he'll take off running. Whistle for your horse and mount up to catch him as quickly as possible. You'll have to lasso him just like a wild horse, then move close and press "Y" or "Triangle" to hogtie him. Once he's immobilized, you can pick him up and put him on the back of your horse for delivery, then ride back to Seth.
After a little gentle persuasion, Moses reveals the location of Seth's map. Afterward, Seth offers you a pardon letter to clear your name. Follow him into the nearby telegraph office to continue. Walk up to the counter and use the "B" or "Circle" button to use the letter and erase your bounty.
Your mission is complete, and Seth now owes you a favor. You're one step closer to getting inside Fort Mercer and taking care of Bill Williamson.
